The Thermally Accelerated Short Time Evaporator (TASTE), developed by Ralph Cook, is the most advanced evaporator for any type of citrus or clear fruit juice.
The TASTE Evaporator can also be used as a preconcentrator for products that contain fibre, to improve the final product quality. Because the evaporation takes place in a single pass and the product has only a short exposure to high temperatures, the taste, smell and feel of the processed product is preserved. The final concentration is then reached in the added Forced Circulation Evaporator stage.
The TASTE Evaporator is widely used to concentrate both cloudy and clear juices.
It produces a product with considerably less thermal damage than any other evaporation process.
